GFJ (217-224) Guess what, I'm still apartment hunting....

Sunday: Today should have been spent in a bar, watching the World Cup final match.. Instead, I was running all over NYC looking at apartments.

BREAKFAST: Nothing
LUNCH: Tortilla Chips and a Fage with Strawberry
DINNER: Rosemary chicken and Potatoes Gratin



Rosemary Garlic Chicken Recipe:

Ingredients
4 boneless, skinless chicken-breast halves
1 tablespoon olive oil
2 garlic cloves, peeled and cut in half lengthwise
1 teaspoon kosher salt
freshly ground black pepper
1/2 cup sherry vinegar
1/2 cup low-sodium chicken broth
1 tablespoon fresh rosemary leaves or 1 teaspoon dried rosemary
1 tablespoon unsalted butter
Directions
1.Using a rolling pin, pound the chicken breast halves between 2 sheets of wax paper until they are of uniform thickness.
2.Heat the oil and garlic in a large skillet over medium-high heat until the oil shimmers and the garlic browns. (Don't burn the garlic.) Add the chicken breasts and cook until golden, 3 to 5 minutes on each side.
3.Add the salt, pepper, vinegar, chicken broth, and rosemary. Cover, reduce heat to medium-low, and cook 3 minutes longer or until the chicken is fork-tender. Remove the chicken to a platter and keep warm.
4.Increase heat to high and boil the sauce until thickened or syrupy, 3 to 5 minutes. Whisk in the butter and pour the sauce over the chicken.


Potatoes Gratin
Ingredients
1 1/2 cups heavy cream
1 sprig fresh thyme
2 garlic cloves, chopped
1/2 teaspoon ground nutmeg
Butter
2 pounds russet potatoes, peeled and cut into 1/8-inch thick slices
Salt and freshly ground black pepper
1/2 cup grated Parmesan, plus more for broiling
Directions
Preheat the oven to 375 degrees F.

In a saucepan, heat up the cream with a sprig of thyme, chopped garlic and nutmeg.

While cream is heating up, butter a casserole dish. Place a layer of potato in an overlapping pattern and season with salt and pepper. Remove cream from heat, then pour a little over the potatoes. Top with some grated Parmesan. Make 2 more layers. Bake, uncovered, for 45 minutes. Sprinkle some more Parmesan and broil until cheese browns, about 5 minutes.


Monday: Every night this week I went to see apartments. I am so tired of spending money on cabs and sweating around town, looking at crappy places. TIRED.. I may just move to Greenwich a year earlier than planned... Oh, yea, that's my new plan... To move to Greenwich in a year. Apparently there is an amazingly fun "Melrose Place" -esque complex out there. I'm totes into it.


BREAKFAST: Fage with Peach
SNACK: Those damn Hot, Spicy and Sweet Pecans
LUNCH: Arugula Salad with chicken, gruyere and Swiss salad dressing.


DINNER: Arugula Salad with leftovers from Sunday.


Tuesday:


BREAKFAST: Fage with Strawberry
SNACK: Those damn Hot, Spicy and Sweet Pecans
LUNCH: Arugula Salad, Sushi, Edamame
DINNER: Hecho en DUMBO with Church and DumbB*tch...

Wednesday

BREAKFAST: Fage with Blueberry
LUNCH: Two mini-chorizo tacos
SNACK: Some potatoes gratin
DINNER: Arugula Salad and Potatoes Gratin

Thursday

BREAKFAST: Fage with Strawberry
LUNCH: Arugula Salad.
DINNER: Mexican feast from Mexican Radio .... Nachos and Guacamole.

Friday: Friday was babysitting night. I went out to Greenwich to babysit Sweet T and her friend. (Baby N was at sleep-away camp for week... Sidenote: He came back sweeter than ever. He even bought a Beanie Baby for his little sister.. How cute?) Before I babysat what did I do? I WENT TO SEE SOME MORE APARTMENTS. I've seen every apartment in NYC.

BREAKFAST: Nothing
LUNCH: Hudson Diner eggs over medium corned beef hash.
DINNER: Spaghetti with meatballs

Saturday: I was 100% hesitant to Paddle Board... Like, I was b*tching about it even after Harmonica picked me up.. Hell, I was still b*tching as we were getting on the boards. Actually, I'm going to admit that I was complaining the entire time we paddled over to Kathie Lee Gifford's house... Then a light switch flipped and I found my new love, Paddle Boarding. It is so relaxing and peaceful. Granted, I was stuck at one point, paddling against the current and feeling that it was completely futile to try and get back on the board, that perhaps I should either jump off and swim back OR ask one of the people on their boat to bring me back but, I persevered. I can't wait to go back again this weekend. THANK YOU, HARMONICA for introducing me to Paddle Boarding.

BREAKFAST: Scrambled eggs and toast
LUNCH: Alpen Pantry in Old Greenwich Black Bread Sandwich with Turkey, Lettuce and Borsin.

DINNER: Salami and Gruyere cheese and petite carrots and hummus appetizers... Which, I filled up on.. as I basically drank a bottle of Rose on my own and needed food...and then I had some salad with grilled BBQ chicken.

Sunday...I'm embarrassed that my niece, who is 8yo, kicked my arse in Monopoly. All she had were three hotels on the board. Apparently that's all it takes to wipe me out.. Then we had girls shopping with my sister. If you live by the Westchester Mall, go and hit the sales.. Everything was DEAD CHEAP!

BREAKFAST: Scrambled eggs, toast and a maple sausage link.
LUNCH: Sapparo Ichiban Ramen.
SNACK: FoodShouldTasteGood White Cheddar chips and Green-Tea Iced Latte.

DINNER: Barefoot Contessa Parmesan Crusted Chicken with Salad.
