Recipe: Mexican Grilled Corn




Nanimal said this is the best grilled corn she's ever tasted.. She's obsessed. Just reading the recipe is making my mouth water. YUM!












Mexican Grilled corn:

1/4 c. light mayo
3 Tbl. sour cream
3 Tbl. fresh cilantro
1 minced garlic clove
3/4 t. chili powder
1/4 t. ground black pepper
1/4 t. cayenne pepper
4 t. juice from one lime
1/2 c. pecorino Romano cheese, grated

4 t. vegetable oil
1/2 t. kosher salt or 1/4 t. regular salt
6 husk-free ears of corn

Combine mayo, sour cream, cilantro, garlic,1/4 t. chili powder, black
pepper, cayenne, lime juice and cheese in a large bowl. In a second
large bowl, combine oil, salt, and remaining 1/2 t. chili powder. Add
corn and toll until evenly coated.

Grill corn over coals, turning occasionally, until lightly charred on
all sides.Remove from grill and place in mayo mixture until evenly
coated.
Serve PRONTO!
